Kevin Tubb, executive chef and proprietor of Eldorado Grill, has been cooking professionally since 1983 and has had the opportunity to work with some of the great chefs from the Southwest who taught him never to compromise on quality, presentation or sanitation. He regularly cooked for Lady Bird Johnson and Governor Ann Richards in Austin, Texas. Tubb relocated to Madison in 1996 and has run Eldorado Grill ever since.
His cookbook, Eldorado Grill - Southwestern Cuisine, allows you to enjoy some of the same recipes he uses at his restaurant. The most unique Southwestern gem this side of the Monona Terrace is the Eldorado Grill. It’s an eclectic combination of Tex-Mex, Southwestern and Mexican cuisine with an upscale twist. The restaurant interior is an old candy factory that has been transformed into a warm and authentic Western atmosphere, lending itself to incredible food and the best margaritas in town.
