Sumatra Mandheling Grade 1 Green Coffee Beans: Sumatran coffees capture the wild jungle essence of this tropical Indonesian island. It is an earthy, deep, complex, full-bodied coffee that exhibits low-acidity smoothness. Creamy, sweet, with a touch of butterscotch, spice and grassiness. Naturally prepared gives the beans a special cup. This is one I drink at home and blend with the Costa Rican. Softer bean roast to Full City or Vienna. Kenya AA Kichwa Tembo Green Coffee Beans: A bright, extremely complex coffee that is truly vibrant. Winey with nice body. It is full of power and character. Like the Centrals, well balanced but with more ZIP. Hard bean and will roast to any profile, I like a Vienna roast for this bean. Ethiopian Yirgacheffe Green Coffee Beans: These are amazing and unique coffees. Yirgacheffe is a town in the Sidamo region and coffees from this region will surprise you with their floral and tangerine notes. I like to think of the Yirgacheffes as the Tabasco of the coffees. As a dash of Tabasco will turn an ordinary chicken soup into a great cup of soup, a yirgacheffe will take a medium cup to a whole new level. Many folks like it straight, I like to blend it. Roast it lighter than the base of your blend as you are looking for the acidity or snap it will give your blend and lighter roasts have more acidity.
