Gile Cheese has a long history of providing award-winning cheese. In the early 1920s, a group of area farmers needed a place to process their milk into cheese. So they leased farm land owned by the Carr family and created a co-op. This co-op was the beginning of the Carr Cheese Factory. In 1946, the cheese factory was purchased by Cletus and Sally Gile. While raising 10 children, all of whom helped at one time or another to make cheese, Cletus and Sally grew the business into a successful and award-winning cheese factory. Cletus' son, Tim, bought the business in 1984. A third-generation cheesemaker, Tim, with the help of his wife, Diane, has expanded the product line to include new varieties of cheese, while still offering the tried and true favorites for which Gile Cheese is known.

Gile Cheese has won numerous awards at local and state competitions. Gile cheese has been named Grand Champion at many of the local county fairs. Gile's Baby Swiss and Mild Colby cheeses were both recipients of multiple first place blue ribbons at the Wisconsin State Fair, in which they were also awarded the Governor's Sweepstakes Trophy for receiving the highest score in their respective classes.
