1. Preheat oven to 350°
2. Stir together first 8 ingredients in a 5-quart dutch oven
3. Add chicken and water; bring to a boil over high heat
4. Add olives
5. Transfer to oven and bake uncovered for 30 minutes
6. Transfer the chicken pieces to a deep serving bowl and garnish with cherry tomatoes and grated parmesan cheese
