Chicken Smothered in Mediterrean Olives

A healthy, low-fat, and easy chicken dish with the great taste of Mediterranean olives

15 Minutes 30 Minutes 45 Minutes 4-6

Ingredients

  • 2 large onions
  • 1/2 cup Italian parsley, chopped
  • 1 tsp oregano
  • 1 tsp basil
  • 3 Tbsp extra virgin oil
  • 1 Tbsp finely chopped garlic
  • 1 tsp ground pepper
  • 3/4 tsp salt
  • 1 - 4 lb chicken, skinned
  • 2 cups Stump's Mediterranean olives
  • 2 cups water
  • cherry tomatoes and Parmesan cheese for garnish

Directions

1. Preheat oven to 350°

2. Stir together first 8 ingredients in a 5-quart dutch oven

3. Add chicken and water; bring to a boil over high heat

4. Add olives

5. Transfer to oven and bake uncovered for 30 minutes

6. Transfer the chicken pieces to a deep serving bowl and garnish with cherry tomatoes and grated parmesan cheese
