Smoked Ham and Egg Bake

Here’s an exciting new way to serve a tried-and-true flavor combination. Nueske Ham and scrambled eggs make this a perfect dish for busy weekends.

  • 1 cup Nueske smoked ham, diced into 1/4 -inch cubes
  • 12 eggs, beaten
  • 3 oz can mushroom stems & pieces, drained
  • 1/4 cup green onions, chopped
  • 3 Tbsp butter
  • Cheese Sauce: 1 cup cheddar cheese, shredded
  • 2 cups milk
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1/2 tsp salt
  • 1 tsp pepper
  • Topping: 1 1/4 cup soft bread crumbs
  • 2 Tbsp butter, melted
  • 1/8 tsp paprika


1. In large skillet, sauté ham and onion in 3 tablespoons butter until tender (not brown)

2. Add eggs, scramble until just set

3. Remove from heat, set aside

4. To prepare cheese sauce: In another pan, melt butter over medium heat

5. Blend in flour, salt and pepper

6. Add milk gradually, stirring continuously

7. Cook and stir until bubbly

8. Stir in cheese until melted

9. Fold eggs and mushrooms into sauce

10. Turn into 12 x 7-inch baking dish

11. Combine topping ingredients; mix with fork and sprinkle over top

12. Cover and refrigerate overnight until 30 minutes before baking

13. Bake uncovered at 350 degrees for 30 minutes
