DONNA'S DELIGHTS - Great Northern
Bean Soup

A hearty meal made fast
and easy with canned beans. The
amount of ingredients in this recipe will serve 4.
Ingredients for Great
Northern Bean Soup:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 cup carrots, peeled
and chopped
- 2 cloves garlic, minced
- 4 cups low fat chicken
broth
- 30 ounces canned Great
Northern beans, drained
- 3/4 pound lean ham, cubed
- 1 bay leaf
- 1 teaspoon dried thyme
- salt and freshly ground
pepper to taste
Preparation:
- In a large frying pan,
heat oil.
- Cook onions, celery,
and carrots over medium heat until onions are translucent.
- Add garlic and cook
1 minute.
- Add chicken broth, beans,
ham, bay leaf and thyme.
- Simmer 30 to 45 minutes
until flavors are blended.
- Add extra chicken broth
if soup gets too thick. Remove bay leaf.
- Add salt and pepper
to taste.
