Summer
Salad

Chicken
and Fresh Fruit Salad
with Peach Yogurt Dressing
Fruit
with touches of honey, allspice and nutmeg. Add grilled chicken strips
for a refreshing summer luncheon or supper meal.
Ingredients:
- 1 teaspoons honey
- 1 tablespoon lemon juice
- 2 large apples, cored
and diced
- 6 ounces fat free peach
yogurt
- 1/4 cup fat free mayonnaise
- 1/4 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1 stalk celery, diced
- 2 cups (1 pound) fresh
seedless purple grapes
- 2 precooked boneless
chicken breasts, cut into strips
Preparation:
In a large bowl, combine
honey and lemon juice. Add apples and mix well. In a small bowl mix
yogurt, mayonnaise, allspice, and nutmeg. Add dressing to apples. Stir
in celery and grapes. Add chicken. Cover and chill. Serves 4.
