Donna’s Recipes - Summer Salad

Chicken and Fresh Fruit Salad
with Peach Yogurt Dressing

Fruit with touches of honey, allspice and nutmeg. Add grilled chicken strips for a refreshing summer luncheon or supper meal.

Ingredients:

  • 1 teaspoons honey
  • 1 tablespoon lemon juice
  • 2 large apples, cored and diced
  • 6 ounces fat free peach yogurt
  • 1/4 cup fat free mayonnaise
  • 1/4 teaspoon allspice
  • 1/8 teaspoon nutmeg
  • 1 stalk celery, diced
  • 2 cups (1 pound) fresh seedless purple grapes
  • 2 precooked boneless chicken breasts, cut into strips

Preparation:

In a large bowl, combine honey and lemon juice. Add apples and mix well. In a small bowl mix yogurt, mayonnaise, allspice, and nutmeg. Add dressing to apples. Stir in celery and grapes. Add chicken. Cover and chill. Serves 4.
