Cranberry Cheddar Broccoli Soup

Bacon, chopped
Butter
Carrot, chopped
Onion, chopped
Celery, chopped
Green or red pepper, chopped
Broccoli, chopped
Chicken stock
Dark beer (optional)
Northwoods
Cheese Cranberry Cheddar, shredded
Flour
Heavy cream
Milk
Salt and pepper to taste

| Preparation |

| Sauté bacon in butter, remove with slotted spoon. Cook
vegetables in bacon drippings until onion is transparent. Combine
vegetables, chicken stock and beer in stock pot, heat to boil, simmer
until vegetables are tender. Scald milk over medium heat. Combine
cheese and flour in plastic bag, toss to coat cheese, add to heated
milk. Cook until thick, add cream, pour in stock pot. Season with
salt and pepper, garnish with bacon and cranberries. Makes 5 cups
