Rwandan Bourbon Green Coffee Beans: Frought with a history of civil war, Rwanda is arriving in the specialty coffee industry with a great cupping coffee. Situated in the west of Rwanda, near the shores of Lake Kivu, these green coffee beans are grown by the members of the Ingoboka farmer's association, at high altitudes (1450-1800 meters) and volcanic soils. As with Kenya, and other East African coffees, this 100% Bourbon bean has a good body and a classic clean taste. I enjoy this cup at any time of the day, it is smooth with hints of sweetness, hazelnut, lemon/citrus tones, rich body and a winey acidity.

Ethiopian Yirgacheffe Green Coffee Beans: These are amazing and unique coffees. Yirgacheffe is a town in the Sidamo region and coffees from this region will surprise you with their floral and tangerine notes. I like to think of the Yirgacheffes as the Tabasco of the coffees. As a dash of Tabasco will turn an ordinary chicken soup into a great cup of soup, a yirgacheffe will take a medium cup to a whole new level. Many folks like it straight, I like to blend it. Roast it lighter than the base of your blend as you are looking for the acidity or snap it will give your blend and lighter roasts have more acidity.
