This Pickled Herring Sampler from Bay View Packing includes one glass 24 oz jar each (3 jars total) of the following varieties: herring in cream sauce (24 oz), herring in wine sauce (24 oz), and herring rollmops (pickled herring wrapped around a pickle; 24 oz, 12 count). Bay View uses only the finest imported herring in the world. It is best to consume the herring within one month of opening the jar. Keep refrigerated at all times. Consume within one month after opening. Unopened, sealed jars of herring have a shelf life of nine months in the refrigerator. Shipped in styrofoam with ice blocks.

The Herring in Cream Sauce is a hand-packed tasty treat, made only with the finest imported herring and pure Wisconsin dairy sour cream, fresh cut onions, and seasonings. The Herring in Wine Sauce is the finest imported herring prepared with wine sauce, fresh cut onions, and a blend of spices, making it a popular any-time snack. And the Herring Rollmops are high quality, un-cut, herring fillets that are hand-rolled with choice, cured dill pickles, complemented with sliced onions, and packed in a wine sauce.

BEST PRACTICES FOR HANDLING HERRING PRODUCTS TO ENSURE SHELF LIFE AND MAINTAIN QUALITY OF PRODUCT 1) Proper temperature control is critical to maintaining quality of herring. Keep between 33-40 F. 2) Herring is a ready-to-eat product. It has been cold cured. Do not cook or heat. 3) Product cannot be heated, thawed, or microwaved. 4) Do not freeze. 5) Do not let product sit out. Sitting at room temperature will soften fish and affect quality. 6) Be sure to rotate product. Time, temperature, and light destroy the quality of herring (soft fish.) 7) Do not mix or over-stir herring products. 8) Keep proper brine level. Fish should be covered completely by brine. Excess brine should be poured off; you want fish packed tight with brine a couple inches over the top.
