It all began in 1956 with Fred and Kathy Volle, who came to America from Bavaria Germany, bringing with them their craftsmanship for sausage. The first Bavaria store opened in 1961 and introduced Madison to the "first Bratwurst" in Wisconsin. Today, over 50 years later, The Bavaria Sausage Kitchen is recognized for unmatched quality and consistency in the production of its fine sausages.

Using no artificial coloring, ingredients or fillers, Bavaria Sausage produces sausage using old family recipes. Each product proudly displays the Bavaria Sausage label and U.S. Government Inspection Seal of approval.

Bavaria makes 13 varieties of bratwurst that can be ordered pre-cooked or ready for the grill and includes a recipe in each box. For a special treat, simmer brats in beer and onions before grilling. Bavaria's specialty all-beef, hickory-smoked "Landjager" is an outdoor person's special treat and makes an excellent snack for children and adults.
