An authentic German-style Potato Salad that will have your family and guests asking for more.
1. Boil potatoes in skins until done; peel and dice
2. Add celery, boiled eggs, onion, and parsley
3. Set aside
4. Fry bacon in heavy fry pan; drain all but 3-4 Tbsp of bacon fat
5. Add sugar, vinegar, water, eggs, mustard, salt, and pepper
6. Simmer about 10 minutes or until mixture thickens
7. Remove from heat and immediately pour bacon mixture over potatoes
8. Mix lightly
9. Serve warm
