Cranberry Struesel Muffins

A true Wisconsin appetizer: addictively delicious fried cheese curds flavored with beer

Ingredients

  • Struesel: 1/2 cup brown sugar1 t Baking Powder
  • 1/2 cup flour
  • 2 tsp cinnamon
  • 1/4 cup butter, softened
  • Batter: 2 cups flour
  • 1/2 cup walnuts, chopped
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp baking powder
  • 1/2 cup butter, melted
  • 1 tsp salt
  • 1/2 cup milk
  • 2 cups Urban Processing's Sweet & Moist Dried Cranberries

Directions

  1. Preheat oven to 350 degrees
  2. Grease 12-cup muffin tin
  3. Place struesel ingredients in a small mixing bowl
  4. Work butter into dry ingredients until mixture is crumbly by using a pastry...
  5. Set aside
  6. Combine flour, sugar, baking powder and salt in a medium mixing bowl
  7. Stir in cranberries and walnuts
  8. Combine remaining ingredients in a separate mixing bowl
  9. Add to dry ingredients, mixing just until moist
  10. Sprinkle struesel on each muffin
  11. Bake for 25-30 minutes or until golden brown
  12. Remove from tins; cool
