Tri-Color Peppers with Smoked Bacon

A colorful side dish of green, red and yellow peppers with the famous Applewood smoked flavor of Nueske Bacon.

Serves: 6

Ingredients

  • 5 slices Nueske Smoked Bacon, diced
  • 2 green peppers, cut into 1/4 inch strips
  • 1 red pepper, cut into 1/4 inch strips
  • 1 yellow pepper, cut into 1/4 inch strips
  • 1/4 cup onion, chopped
  • 2 tomates, chopped
  • 1 tsp cumin seed
  • 1 tsp dried Oregano leaves
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup sour cream
  • fresh cilantro, snipped

Directions

  1. Fry bacon until crisp, remove from pan and drain
  2. Reserve 2 tbsp of bacon fat in pan
  3. Add colored peppers and onion, frying over medium high heat for 2 minutes
  4. Add diced bacon and remaining ingredients, except sour cream and cilantro
  5. Heat to boiling; reduce heat and simmer uncovered for 5 minutes
  6. Remove from heat, stir in sour cream, sprinkle with cilantro
  7. Serve warm
